Art in the kitchen - keeps me out of trouble!

Some people would say I have way too much time on my hands these days. But hey, this is art here.

Here’s how I spent my morning…grating, sculpting, and coloring cheese balls to look like apples. Why, you ask? Just because I could, I answer!

Actually, my friend Margaret Ann is having 90 people over for dinner Friday night to celebrate her 50th class reunion, so I’m trying to help out by making a few appetizers. Margaret Ann is a restaurant owner and the best cook I know, so I’m continually trying to measure up to her standards. Bet she hasn’t done this before.

In case you ever want to give it a try (it’s especially nice for the holidays) here’s how I made them. The pineapple I added this time was an experiment. I’ll have to let you know if that was a wise addition.

Apple cheese balls

9 ounces white cheddar cheese shredded

2 packages cream cheese softened

2 Tablespoons onion finely grated

1 8-ounce can crushed pineapple, drained

1 Tablespoon seasoned salt

Dash of cayenne pepper to taste

one cup chopped pecans (I toasted mine lightly)

1/2 cup chopped parsley

1/2 can of ground paprika (about)

Mix all ingredients and divide into three balls about the size of a large apple. Refrigerate for at least 30 minutes. Roll by hand into apple shapes and dredge in paprika. Press your thumb into the top for a slight indention. Stick in a cinnamon stick and a bay leaf in the top and refrigerate until ready to serve. When you slice them, they will look just like an apple.

I made these for my Christmas dinner but wouldn’t let anyone actually eat them because they were so cute. After all, they are art!
