I anxiously await the arrival of the first pumpkins at area grocery stores each fall. Sunday was the day and my spirits soared as I turned into the Kroger parking lot and spied these lovelies out front.
All prepared to fill up my truck, I did a double take when I spied the price – $5.99 a piece! If memory serves me, that’s approximately double what I paid last year. The photo on the previous page was taken at a Kroger somewhere else – note they are $6.99! Gee whiz – that’s pumpkin scalping!
I decided that I would show restraint and wait a little longer and take a trip over to Caledonia to visit the Pumpkin Patch which is always amusing in the fall
I’m wondering if anyone else was intrigued by the recipe for Pumpkin Cheddar Grits which appeared in the Sunday magazine in my local paper a few weeks ago. It will be served at my Thanksgiving dinner for sure.
You cook 3/4 cups grits in 3-1/2 cups boiling water. Add 1/2 teaspoon salt, reduce heat and cook according to package directions. Add 3/4 cups grated cheddar cheese and 1/2 cup canned unsweetened pumpkin and black pepper to taste. Bake until heated through. Serves 6. I don’t know why this wouldn’t freeze really well.
