What’s not to like?

My friend, Linda, from Hattiesburg sent me a recipe I will be trying very soon.  She had it this week at a function at the hospital where she works, and said it was to die for.

Not many things are worth dying for, but this may be one of them:

Scrimp (we called them scrimps in Mississippi)/ Artichoke Dip

1 Cup Shrimp, peeled cooked and de-veined.  (sprinkle with a little Old Bay Seasoning and let set while you are preparing the onions and mixing the other ingredients)

1 Cup Green Onions, chopped

1 14 oz can Artichokes drained. (Progresso brand is usually best)

½ Cup Mayonnaise

1 Cup Sharp Shredded Cheddar Cheese

1 Cup Shredded Parmesan Cheese

½ Tsp. Garlic Salt (or use a pinch of salt and ¼ tsp of garlic powder)

½ Tsp. Paprika to garnish (I added a pinch of Cayenne with the Paprika)

In medium baking dish, mix together the chopped onions, both cheeses, garlic salt, add chopped artichokes and shrimp.  Add mayonnaise and blend lightly.  Top with paprika and bake 20 minutes or until slightly brown and bubbly.  Serve with Tortilla strips or other chip of choice.  Some folks like crackers with it……..

I think I’ll just eat it with a spoon!
