I made a new recipe this weekend for our tailgate party and everyone wanted the recipe. I promised to post it for all to try. It is super easy and holds beautifully for hours.
My team didn’t do so well this weekend, but the chocolate chip cheese ball helped us through the night. Ignore the seafood spreaders – that’s all I could find when heading out to the game.
Chocolate Chip Cheese Ball
1 8-ounce pkg. cream cheese
¼ tsp vanilla extract
¾ c. confectioners sugar
2 T. brown sugar
¾ cup miniature semi-sweet chocolate chips
¾ c. pecans, finely chopped
Chocolate or regular graham crackers divided into pieces
In a mixing bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars, beat just until combined. Stir in chocolate chips and a few nuts if you desire. Cover and refrigerate for two hours. Place cream cheese mixture on a large piece of plastic wrap; shape into a ball (I prefer a log). Refrigerate again at least one hour. Just before serving, roll cheese ball in pecans and serve with graham crackers.
