My friend Sandy didn’t have any suggestions for improving my cornbread dressing but she did send along her recipe for Green Bean Bundles.
For those of you weary of serving the old trusty Green Bean Casserole with Cream of Mushroom soup, this is an excellent variation on the lowly canned green bean.
I have tried these in the past and they are great, but I had misplaced the recipe. Thanks Sandy, for reminding me.
Green Bean Bundles
3 cans whole green beans
15 slices bacon
1 cup brown sugar
½ cup margarine
1-2 teaspoons garlic, minced
Hearty dash of soy sauce
Drain beans. Cut bacon slices in half. Wrap half slice of bacon around 8-10 green beans, seam side down. Place bundles in casserole dish. Melt margarine, brown sugar & soy sauce. Mix well and pour over green beans. Marinade in fridge overnight. Bake uncovered for 350’ for 45 minutes.
I love green bean bundles, but I pour Russian dressing over mine. If I
can’t find the Russian, I use French. A friend uses Italian. YUM, I think

Anyone think that Worscheshire (sp) sauce could be substituted for the soy sauce (I’m allergic to the soy and wheat in it)?
Think the one my sister fixed us for lunch used sherry vinegar, but don’t know what all else was in there, other than the mushrooms I could see.

Emily, I love the bean bundles and have used them often…will again this Christmas. I marinate them in Iatlian dressing. I love that you can do them the day before…
I know this is an old column, but I saved it to copy the bean bundles recipe. Isn’t 12 teaspoons of garlic a lot? I’m not a cook, but it doesn’t sound right. Do you add it [garlic] to the marinade or was it mistakenly put in the recipe? It’s not mentioned in the directions. I’m inept and need to have specifics. Thanks—
