One of Mississippi’s most delightful secrets is out. Word is getting around fast that The Rubba Boot has the tastiest crawfish around.
If mud bugs aren’t your “thang” – you can sample a delectable Crawfish Etoufee and other Cajun specialties in this little hidey-hole tucked next to Sonic Drive in on Highway 12.
These folks know how to cook crawfish to perfection along with the corn and new potatoes.
My boys grew up in South Louisiana and finding good crayfish this far north is iffy, but thanks to the Cini Family – Aaron and Courtney – the freshest most perfectly cooked crawfish are delivered daily.
Courtney’s family farms crawfish in South Louisiana and they are trucked in daily. Once the mudbugs play out this summer, the kitchen will focus on other fresh seafood items from the heart of Cajun Country.
“We love good people and good food,” said Aaron who is in charge of cooking. “Crawfish is a favorite since Courtney’s family raises them on their family farm in Opelousas, Henderson, Port Barre and Arnaudville, Louisiana. Growing up, the whole family would gather at Grandma and Pop’s shed every weekend to visit and boil a few sacks of fresh crawfish they had just fished that day.”
My children make a bee line to this place when they arrive in Starkvegas. The crawfish this week were a large as lobsters!
Aaron has even devised a special table for his daily crawfish boils (see below) It features a big hole in the middle where the shells can be tossed, cup holders for beverages and a paper towel dispenser. No utensils necessary. Mercy y’all. This place is authentic Cajun.
