How to cook a zucchini bat


My son was out of town for a few days and when he returned his zucchini had grown to monstrous proportions, some the size of baseball bats.

I found a delicious use for these overgrown squashes which I pass long in case you find yourself in the same predicament.  Make Zucchini Pizzas!



I made them night before last and they were delicious.  First I sliced the bats lengthwise into planks less than a quarter inch thick.  I brushed them with olive oil and grilled on my indoor grill until browned and tender.  I topped the planks with my homemade pesto, a thin coat of Ragu spaghetti sauce, two kinds of cheese (pepperjack and parm), onions, garlic and pepperoni. But you can use whatever floats your bat.Zukes with sauce on top

The “pizzas” were finished off in an oven set at 350 until cheeses were melted and browning slightly.  Oh my, they were delicious, quick and easy.  Try it.  Great way to get your veges and save the zucchini from the compost pile.
