My friend Marie and I are two lucky girls. We have been the grateful recipients of more home grown tomatoes that any girl deserve.
All were gifted by our friend and high school chum, Ronnie Tiffin (AKA Tomato Man Tiffin). He and his wife Valerie live on a small farm west of Starkville where he has gone from the cable TV business to become an expert gardener.
Ronnie planted 44 tomato plants this year and each one must have produced hundreds of tomatoes which I prefer to think of as fruit of the Gods. Today we were out of see his place first hand and it is beautiful, peaceful country living at its best.
Along with tomatoes we received zucchini and cucumbers and his special pizza recipe (pictured above) which I will attempt this weekend:
The Tomato Man’s Zucchini Pizza
3 cups shredded zucchini
1 tsp salt
2 eggs
1/2 tsp. baking powder
1/2 cup whole wheat flour
1/2 cup shredded mozzarella cheese plus one cup for topping
1 large tomato sliced in 1/4 inch rounds
fresh basil chopped
Preheat oven to 450. Combine shredded zucchini and salt in colander. Place over a bowl and and let drain for 15 minutes. Squeeze as much remaining liquid out of zucchini as possible and place in a bowl and mix with one half cup of mozzarella, flour baking powder and eggs
Place on cookie sheet over parchment paper and spread forming a circle.Bake 8 minutes and add other ingredients over top. Slice and Serve. Yummo.
Just when I thought life could not get better…..it got BETTER!!!! We found tomato paradise and they are delicious! Thank you Ronnie and Valerie for your generosity!! Can’t wait to try the zucchini pizza recipe.
