Pump it up with Protein Powder


I’ve been trying to consume about 25 grams of protein per meal and it’s hard, especially at breakfast.  I don’t know why I never thought of this, but I tried using it as an addition to coffee and quick breads and viola!  The protein requirement is easily met.

This filling bread packs a double whammy of 5 grams of fiber and 8.5 grams of protein per serving! Thanks to Sparkpeople.com for the great ideas. 

Number of Servings: 9

Pumpkin Bread


    1 can Libbys Pumpkin
    2 cups Almond Silk 60 calories
    3/4 cup Blue Agave
    4 eggs
    3/4 cup egg whites
    1 teaspoon cinnamon
    1 teaspoon ground ginger
    8 Tablespoons or 4 scoops of protein powder


Serving is 3/4 cup.


Combine ingredients and pour into a 9X13 greased baking dish. Bake for 60 minutes at 350 degrees F.  Here are the numbers….

  • Total Fat: 2.2 g
  • Cholesterol: 62.0 mg
  • Sodium: 101.0 mg
  • Total Carbs: 23.1 g
  • Dietary Fiber: 5.3 g
  • Protein: 8.5 g

  1. What happened to bacon and eggs? Is that Blue Agave a brand of tequila? Dang, I didn’t know there was protein in tequila. I need to replace the bloody mary’s with margarita’s! But, there’s more vitamin C in the Zing Zang than the lime juice. Dang all these choices. Maybe I’ll just drink both.

  2. Al…Drinking protein powder (vanilla) with Tequila will make a great drink for my Memorial Day party. I won’t even bother with food or have to fire up the grill. Thanks for the idea.
