I picked up a bunch of zucchini at the Farmer’s Market on Saturday and decided to try something new.
If you haven’t tried oven “fried” zucchini, you don’t know what you’re missing. This would work for yellow squash as well, and today I’m trying it with green tomatoes.
Oven Fried Zucchini
Slice zucchini (I did one) in thin slices – the thinner the better. Place them on paper towels for about 10 minutes to let the moisture sweat. Dip each slice in one beaten egg. Then dredge in the following mixture:
1/4 cup grated Parmesan Cheese
1/2 cup bread crumbs (I used Panko)
1 tsp. garlic powder
1 tsp onion powder
1 tsp pepper
salt to taste
Bake the zucchini for five minutes at 450 degrees. Flip over and bake seven more minutes. Delicious!
